Well, I sure do appreciate all the good advice. Seeing as I'm new to this type of smoking and understand now that a COS isn't what I'm looking for. I bit the bullet, literally, I went for a bullet smoker to the tune of a 22.5 WSM.
I'm just waiting on it to arrive. I'll work on my technique and maybe some year get a stick burner when the stars line up.

Will do, Working on my 3-2-1 technique with my Acorn tonight, which I think is drawing air from some place other than the damper . Spares came out awesome for cooking in the rain. Can't wait to take on the elusive brisket with the wsm.

Mixed some of the foiled juice with some bbq sauce, wow money smokey goodness

Pre-production to the wsm experiment. I could only fit one full small rack on the acorn but here are the results. Man this smoking stuff is fun.... Here are the results

That Looks Good- just remember 3-2-1 is more of a catchy name - most guys do a variation of it like 2-1-1 or 2.5 -1-.5 etc.....2 hrs in foil can make mushy ribs.

Due to some time restrictions it worked out 2.5, 2, 30min. Texture seemed good. Thanks for the advice. I was trying to stick to the 321 but just gotta roll with it I guess
