Default Baffle

I made my baffle and grate. The baffle is ok for a beginner,but how perfect does have to be, it is aiming the heat down under water pan. Is that what you want? you help is appreciated.EEL

Just make sure it isn't to long. You want the heat and smoke to be able to come up both sides of the water pan. If it is too long, all the heat will go up the side away from the firebox and creat a hot-spot on that side.

If you don't already have some, pick up 3 or 4 or 5 cheap oven thermometers, the little hang on the oven rack ananlogs for $1-$2 at the local discount store.

Use these to figure out if you've got the heat fairly evenly distributed from side to side.
