I have been smoking for about 2 years now on my Weber Kettle with a Craycort cast iron grate. I take out one of the quadrants and isolate it for my charcoal.



It has served me well and will soon be retired to grilling duties only as I just put in a down payment on a new custom vertical offset similar to the New Braunfels Bandera (my inspiration) but a bit larger and heavier. It will be all 3/16" plate fab. I took a few ideas I found around here as well as scouring the web looking for similar designs that had some good features. An exploded view of it is shown below. It will have a 3'x2'x2' smokebox with a 2'x'2x2' firebox.



I am very excited about my ~500% increase in smoking area. There will be spots for a couple more should I decide to add a couple more in the future.

I wanted to add a SS griddle insert that I could drop on top of the firebox with the lid open similar to this (link), but I was already increasing my budget a fair bit adding some features, so I may look into it down the road.

Fabrication should be starting soon and should get some good use out of it during football season.

Can't wait to see if completed! I originally wanted to build a vericle insulated pit but some how wondered off to a 24" x 56" offset . Custom pits can get expensive really quick is what I found out...
