Default Wedding Tritip and Pork. Pron

I did 70 lbs Tritip and 60 lbs pork butts for a wedding Saturday. Everything turned out perfect. The pork was brined 36 hours, smoked 12 hours and then pulled at 200 degrees. It made some nice pulled pork. The tritip was seasoned and got 3 hours on the grill low and slow. It was pulled at 140 internal and rested for 1.5 hours before slicing and serving.

140 and a rest for 1.5 hours seems a bit high and long. I always pull at 125 and try not to keep wrapped much longer than 30 mins. And I know another guy who pulls at 110 and foils. Did yours come out juicy and in the medium range still?

Wayne sw The center of it was still slightly pink and plenty juicy. I would rather pull around 132-135 but the bride gave her instructions. It was a big hit and I have several people asking me to cook for them, so I am all smiles. :)

Looks great. I like to pull my tri-tip a little early (125-130) and then do a sear. That's a lot of meat to be searing though.
