Talking OK. Here we go. It's smokin' time

It started at 0630 this morning. I forgot to drag the smoker out last night so had to move it over gravel, stepping stones, hoses etc. to the back yard. As you can see from the pic of this old cheap item we're talking about a lot of banging and rattling. OK, now everyone knows the knob next door is up and doing something goofy. Then I need to get the chimney of charcoal going. More smoke than a forest fire. Nice cool night so I assume most of the neighbours have their bedroom windows open for a bit of fresh air. Sorry. Now I'm getting real popular. As you can see from the photo of my old Char Griller I have resisted any and all good advice on these boards re performing a couple of mods to the old girl. The battle starts. She's at 300, I adjust, down to 200, I adjust again. Doesn't help. Add more coals. That means getting the chimney going again with the required newspaper in the bottom. Wow, can't see the neighbours house or the fence for smoke. The Char Griller comes back with a roundhouse. I go down but back up and swinging. She throws and upper cut. I return with a couple of jabs and a hard right.Finally after 90 mins of dukeing it out she settles down to a nice 250 deg. By this time the neighbours are all peeking at me through their windows and thinking they may have been better off with a Hells Angels clubhouse next door. The pic of the shoulder is 7 hours after the battle started. It's now been pulled off the smoker at 190 and resting. It was quite a fight but I kept my eye on the prize and it was worth it. Will be pulling and munching sandwiches in another 1-2 hours when everyone gets here. Side of beans and slaw. The shoulder brined for about 16 hours then a good rub 90 mins before joining the fray. Sure I could put on a dress and mod the smoker but I would really miss the battles. You play the hand your dealt. It's Mano a Mano and the cavalry isn't coming. I could go electric or gas or pellet but instead here we are. The Char Griller and I sitting and staring at each across the deck each one thinking they are the victor. I take a sip of beer and squint. Ya, today she's my b**ch. Burp!
