You are too modest. Those are some darned fine-lookin' hamburgers. How do keep them from "puffing" up in the middle? Is there a secret?

Well, the patties are hand made. The only time I've had the issue you mention is with premade (store bought) patties. I try not to pack them to much, maybe thats the difference, not sure.
