Default Had to pull off the Short Ribs early... advice for finishing?

I was about 3ish hours into a cook with 2 racks (4 bones each) of some beef short ribs. I got a call that my pop had a heart attack and I wrapped the meat up and put it in the fridge and went to the hospital to be with him.

Luckily, he's ok as of now. Very relieved to see some color in him.

ANYhow, the meat was at about 155 or so (I don't cook 'em to temp, just till they are 'done'... I just keep the probe in there to give me some sort of gauge on when to start checking in on them.

Problem now is, I have to finish them off. Do you think a tin tray + some beef broth in the oven @300 till tender for a bit would be ok? Will they even get tender since the rendering process has been interrupted? I've never done anything like this so suggestions would be welcome!

That will work just fine to finish the cook, Id probably go 325-350 in the oven. You are basically doing braised short ribs at this point, whip up some taters and make gravy from the broth.....delicious!

Yep, they will work out just fine. A very good restaurant out here, that was known for it's beef short ribs would purposely undercook and refrigerate the meat. He would then roast them off the next day, or braise them until tender.

Might as well add some taters and carrots to the braise, make it really good.

Yup, I agree with these guys. Just go ahead and finish them off in the oven. They'll be fine.

You can simply add a little liquid to the foil that they are in and finish in the oven.
