Default Monster 15 lb chuckie!

Here's the answers to a WSM pop quiz...

1. Can you cook with an empty water pan?
2. Can you run hot and fast on a WSM using Kingsford (blue bag)?
3. How long will a big 15 lb. chuck roast take using a WSM?
4. Did I use a powered draft?
5. Did I foil?
6. What temp did I cook to?
7. How long did I rest in a cooler?
8. Will I do this technique again?


Answers:
1. Yes!
2. 325* - no problem.
3. 15 lbs @ 325* = 10 hours.
4. No.
5. After reaching a mahogany color.
6. Until it probed tender to the center.
7. 3 hours.
8. Hell yes!!!
