Default practice guide

Can someone point me in a direction for a practice guide to get into comp style bbq. Time tables, do's and donts, etc.. I am judging in a few months and I want to be more familiar before I go for the judge certification and ultimately one day compete. Just looking for a starter guide

A lot depends on what sanctioning body you will be participating in.

For KCBS, a couple good books to start with are George Hensler's Startin' The Fire or Bill Anderson's Competition BBQ Secrets. If you will be trying any of the South Carolina sanctioning organizations then the rules are completely different, so I can't help you there.

Best thing to do is go to events and talk to folks. BBQ People love to hold forth on pits, rigs, techniques, etc. etc. Just don't ask anyone for their time tables or recipes and take everything you hear with a grain of salt. Don't fall for the old "my secret ingredient is peanut butter" gag!

Good Luck,

-GF

Addendum: Oh, and don't worry about preparing for a KCBS judging class. You need know nothing at all about cooking BBQ to take the class, and nobody flunks out unless they don't show up. Bring your tastebuds and all the rest will be provided for you!

There is a lot of useful info on the Road Map thread. It can be a pain to sort through depending on what you're looking for, but it is well worth it.

+1 on "howtobbqright.com"
