Default Assassin 28's first cook. Pics and Video

First off, sorry for stealing a bit of dobdabomb's thunder. I'm sure his video will be much more in depth. I picked my Assassin 28 up the day before he did, but mine is a standard unit inside, but Jeff did add some of the modifications that dobdabomb requested on the outside of his unit (which I'm very grateful for!)

I seasoned it Friday night at 325 for 3 hours. Woke up Saturday morning and it was still a little sticky inside so ran her for another 4 hours at 350 and everything was just fine.

Here's the quick intro video I made as soon as I unloaded it. There is one comment here that is incorrect. The door does not leak smoke without the latches engaged. I didn't realize I hadn't slammed her all the way shut.

Anyways, here's the quick vid, and some pics from my first cook today. We had 10 folks over for dinner, and everyone said these were my best ribs to date. I like a bit more smoke than were on these ribs, however, I've learned over the years that I like way more smoke flavor than the average person.

Jeff added an aluminium kick-plate on top of the firebox door and locking casters on the front wheels. The opening for the prob/thermometer is on the back now, I think it use to be on the side. I'm pretty sure the casters are becoming standard from here on out.

Great smoker and video. My regular Assassin has locking casters on all four wheels also. Mine does not have the kick plate above the firebox. I'm not sure what purpose it would serve.

Yes, Jeff has begun putting the probe access on the back rather than the side. I specifically asked that mine be put on the side. I thought that it would be better to have them up front rather than having to perhaps reach deep into a hot smoker.

Thunder stolen, I kid. Just got home so trying to upload some video as well.

The probe I thought was better suited for the back due to it being fully open from top to bottom when moving rack back and forth. The side restricts it since you have to feed wires through multiple racks. I had asked for the plate on the back for to set it apart from a customization stand point but if its out in the rain it shields the gasket from the rain from the topside. The video I have shows everything from my side. He added most of the features I had asked to his as well.

BTW, just a quick note to say that the slam latch "catch" on the Assassin is adjustable. In other words, if you wanted a "tighter" gasket seal on the door when the two main pull down latches are not engaged, you can simply take a screwdriver and adjust the catch rearward a fraction of an inch. That will "tighten" up the seal when you've slammed, but not yet latched.

I hope that made sense . . . .

Yep I had to adjust it when I got home with it. It slammed fine when I got it home, but it didnt catch a couple times, brought it back just a tad forward toward the latch and it closed just fine.
