All i can say is the XL BGE is amazing

Looks great. I love mine for pizza. The xl is great because you can really make a big old pizza.

Would you mind giving a run down of your technique and gear?

I have an XL BGE also and have yet to try to do a pizza on it. I'd like to though!

If all I ever did was cook high temp pizzas on my XLBGE, it would be worth it.
But hey...it smokes pretty good too...

I have a reliable local dough source (Italian bulk food store) I've found a red and white sauce I like to use and I get bulk Moz cheese from that same source.
Now..I get to focus on the different toppings.

From pulled pork pizza, to cajun chicken, to veggie pizzas.

If you like the old fashioned, curl up pepperoni, find a place that carries Bridgford Classic Old World pepperoni...

Nice pie my man...

Yes I cooked at 550 and no gasket problems.

I used my ninja blender to make the dough. I made my own sauce using crushed tomatoes, fresh basil, Italian seasoning, granulated garlic and onion, olive oil and chicken bouillon. Then I cooked it in a stainless steel ikea dish on top of the plate setter.
