Default Tacos Caveman Style

I had a hankering for some tacos the other night but didn't want to go the regular ground beef route. I've grilled and then chopped thin sliced beef in the past put have never been really happy with the amount of char I get cooking on the grate, so this time I decided to go cavemant style and cook directly on the coals.

Started with some thin sliced chuck which I seasoned with some home made taco seasoning.


Let the coals get good and hot and then tossed the meat right on.


About 1 minute per side and then pulled


While it was resting I whipped up some pico de gallo and some guacamole



Then got to chopping the beef


Plated up on some doubled up warmed corn tortillas


Not sure how much I like the caveman style, a little more "charcoal" tasting than I would like but it was still very good.

It was definitely tasty, I think the mesquite flavor was just a little more pronounced than I was expecting. The Lazzari lump certainly burns hot and it definitely imparts a lot of flavor.

Tacos look good!! I still haven't made the leap to caveman cooking but I usually get an ok char when I raise the coals closer to the grill in the CharGriller

Isn't there a lot of grit that way?
A friend does caveman steaks on the 1st night of a backpacking trip, says it is good, Can't bring myself to try it with a good piece of dead cow.

There was a little, but not nearly as much as I was expecting. If the coals were hotter and had a little less ash on them I would bet there would be none. The wife had no idea that I cooked them this way and didn't say a word about it, and she tends to notice when things are a little off.

It was fantastic. Simple as can be to make. Scooped out 3 avacado, spooned in a couple big spoons of the pico a little extra lime and then hit the whole mess with a hand masher. Used the leftovers to top a pork chop and eggs for breakfast.
