Default Smokehouse Club Sammy!!!!!

I finally got around to smoking some eye of round!!! I have been wanting to for quite a while and since I have my UDS at work and I had to braise a case of Eye of Round roasts for pot roast I figured I would do tow of them on the UDS!!! I smoked them with KBB coal and a few big chunks of Olive wood. Let my smoker run wide open for a couple hours then shut down two vents and let the meat come up to about 135 internal. Pulled them, let them cool, wrapped them nice and tight in plastic wrap and let them chill in the fridge overnight.


I sliced it extra thin and tossed it with some beer carmalized onions, melted some provolone on top and served it on a triple decker club with lettuce, tomato, pickles, onion and bacon. Thats the special for the week here at work!!! Thanks for looking.
