Default Brisket with Onions and Taters (Pron)



Tried something a little different for me today...

I cooked this 7.5lb brisket flat to 160° and then set it in a foil pan where I had created a bed of onions and new red potatoes. I put in a splash of beer and seasoned the onions and taters with the same rub I used on the brisket. I covered the pan with foil and let it continue cooking until the brisket was ready... planning to serve the taters and onions as a side with the meal tonight :)

They were good... could be better but I'll know that next time. I probably need to add some additional salt and pepper on those when they go in... probably some rosemary and thyme also for good measure :)
