You might. It's good to let the smoke flow around the meat. If pieces are touching, they may not get the smoke ring, and they may be undercooked, compared to the rest of the pieces.

No you should be fine. The UDS is designed to work w/o the waterpan. You're gonna have a crap to. Of juices in the bottom though.

I would put another grate or rib rack so your ribs are not laying on top of each other. Those areas will cook much slower than the rest.

The parts of the meat that are touching will take longer to get up to temp and finish. They also won't bark up there. Can you stand the racks on edge so they take up less grate space?

meats need adequate air flow in between
to cook properly...
a quick and easy way is to use beer can chicken holders
to stack cooking grates like this...

Southern steamers makes the finest rib rack you will ever see or use. Stainless. Just gotta chop one section off to make it fit the UDS. I can do 9 ribs in my UDS
