Default First time stuffed pork loin (Pr0n)

OK, this was a 'spur of the moment' cook, went to my butcher at noon & got a fresh pork loin (13lb). Trimmed off some pieces of skin & hard fat & divided in 3 portions. Got the smaller piece (2.5lb) to cook (just me & the missus)



Butterflied and used Wampus Tapenade as a starting point:

1 6 oz can of pitted black olives
2 cloves garlic
2 TBS drained capers
1 TBS dijon mustard
1 TSP dried oregano

Process all above in a food processor to a paste, adding about 1 TBS olice oil while running the processor.

Only thing I didn't have available were the capers, so that's for next time



Rolled in a bacon weave (what else?)



And on the kettle. Smoked with a chunk of Cherry wood. Running at 250F. IT @ 145F in 90 minutes :)












Served with a simple potato salad. It tasted GREAT.
