Default pork loin with coconut rice

This is a big hit with my family.

Unfortunately I didn't have a Habanero for
the rice this time but this meal turned out great.

Apologies if this post is uninformative. My computer crashed several months ago and my new one is windows 8. It has been whipping my arse. My Son is home from college and helped me work the bugs out. Watch out Noobians. It's on now. Tarhog is back in the saddle!

Looks good from here. How do you prepare the coconut rice?
