I made some flan yesterday, i am wondering if this is something i could make on my kettle. It's is a cook at 350 F for an hour and a half.

Wonder how it would taste with some smoke.

Might be an interesting taste with light smoke, I assume you would still cook in a water bath so I'm thinking only the top, uhhhh bottom, would get smoke. Give it a shot & let us know.

You could make it on your kettle, but I dont know if you would get a good wood flavor into it because it needs to be cooked in a water pan or it will toughen up on you.

Also i am not sure if a smoke flavor would go well with the rich flavors of a custard and would give you a wierd flavor that is not associated with the luxurious texture of custards.

But I say give it a try and let us know how it turns out!
