Talking My first brisket and fatty extravaganza! pRon!!

Well it was high time to get a brisket made on the new kamado joe. A homecoming party was happening for my bro-in-law who just got home from Baharain, so I was asked to smoke meat for it. Picked up a 12.5lb certified angus packer. Missed taking any prep pics but made a dry rub with garlic powder, onion powder, salt, pepper, paprika, and some chipotle pepper. Trimmed and rubbed it up good and put it on the smoker. My hands were gross and the wife was too sleepy to take a pic for me, haha. After I put it on the smoker I realized I needed a drip pan for later and while at the store at midnight I decided making a fatty should happen as well so stuff was purchased for that too.

Here it is almost done:


Cut the flat off, wrapped and coolered and then cut up the point for some burnt ends. Made the fatty right before. Decided to go with 2lbs of JD hot, cooked up some onions and bell peppers, and a 4 blend cheese. Also put on some of the rub from the brisket and a bit of cayenne for some kick.



Then onto the smoker it went with the burnt ends.


Here we are all finished up. The burnt ends were devoured before I could even take a pic, set them out, went inside to get the fatty on a plate and came back outside and they were all gone...guess people liked em!



This got wolfed down too while I went in to cut the brisket up. Here's how it ended up...


All in all it came out amazing. Brisket had amazing flavor, was fall apart tender, and super tasty. Gotta love it when it's devoured and everyone at the party at some points mentions how amazing it all was, especially when it's your first attempt at some a cut of meat!
