doing 5 racks of spares for my old man .......little horse shoes and drinking while we smoke

got a question for everyone ?

what do you guys do with your trimmings from the spares .....

i would hate wasting it

Cook them as cook's snacks or to use later in a pot of beans.

^^^^+1 to Ron's idea, or sometimes I'll grind it up and freeze. Then you have ground pork to mix in for meatballs, meatloaf, ect. Sometimes I throw all the trimmings in a stockpot with onion, garlic, carrots, celery, and seasonings and make pork stock. Great for soup or gravey.

I usually keep them and grind them up so I have ground pork for making sausage.

I smoke them along side the ribs. Then I cut them in to squares and serve them up as rib tips with some sauce.

The small pieces get smoked for snacks for my canine pals, the other stuff I smoke a while then toss in a pot of pinto beans. Certainly don't throw them away!

I have a ziplock bag labeled "pork" in the freezer. I throw in any scraps I don't cook over the coals while I am waiting for the temps to stabilize in my kettle. Good for stir fried dishes.
