Default How long will cryovac full packer keep in the refrigerator?

Just wondering if a cryovac wraped full packer brisket will keep for 2 weeks in the refrigerator or do I need to freeze it for a week?

It really depends on when it was packed. Lots of guys wet age briskets for up to 50 days after the pack date. If you don't know the pack date it's a crap shoot. If it has a 'use by' date from the store, those are typically 30 days after the pack date, but not always.

(BTW, how's that for totally not answering the question? )
