Default Wild Beast Feast

There is a local cook-off called the wild beast feast and I was looking for some ideas. I have access to deer, duck, and quail. any thoughts?

Venison is lean and tough to Que.
Some folks have done it--I just make Jerky.
Someone else will have to chime in here.

Smoked Duck is great. Flavor depends on diet (ie, wild vs. domestic raised). Lean and oily and seems that most cooks brine it and then cover it with bacon. I injected mine.

Smoked Quail? Have not had any available to smoke, but have baked a ton of them. Like a strong tasting Cornish, depending on their diet. Need to find some to smoke someday.

If you are not experienced with wild game smoking--do an advanced search for Deer, Venison, Duck, and Quail limiting your selection to Q-Talk. I was amazed at the amount of great guidance found. I had forgotten how much was there

Do the meats have to be "only one" item, or can you use more than one for presentation? Some Quail with it's relatively light flavor would go well with the bold flavor of Duck.

What are the rules for the final turn-in?

Sounds like an interesting comp.

I second Tim's suggestion on smoked duck. I love duck any way it is prepared. They sure are tasty little suckers.

Is this a smoking/grilling contest or does anything go (baked, fried, etc.) ? I have some excelent recipes that can be done in an oven or in a dutch oven. You might be able to modify them for smoking.

Are there differnt catagories or do you only get one entry?
