Default Hello from Northern VA

I've read the forums for a while and finally decided to register. I'm not completely new to the BBQ world as I grew up in South Texas smoking briskets with my Dad and uncles. I am now looking at possibly building my own smoker and trailer. Nothing too extreme. I have been using a char-broil offset for the basic backyard gatherings and parties. I was finally able to get rid of my last project and am ready to embark in a new one and the garage is clear and ready for a smoker build.

Here is a 20 brisket cook for my cousins wedding last year.

We also did 75lbs of sausage but didn't get a pic of that.

I hope to learn from you all and get some ideas on a smoker and better my cooking skills.

Roland

In the end it will be okay.
And if it's not okay, it's not the end.
