Default Maiden Voyage mini WSM

I have been delayed, but there is nothing better than a Monday cook!

I have a small pork shoulder and a chicken prepared with a southwest rub and a little OO on the chicken. If all goes well, I will have a few snack bites of both and fajitas for dinner.

Except for larger cooks, I haven't used my UDS since building my mini.

It was cruising at 275* for about 40 minutes, added the meat and it shot up to 340* because of 15-20 mph winds.

Now the hard part, going back to work and watching the Maverick.

Default The Chicken Is Ready

Pulled the chicken and nearly ripped the leg off, the wing was already a victim. Perfect opportunity for the first snack. Very moist and flavorful from the southwest rub.

Default Time for resting

Shut down the mini-WSM and brought the pork in to rest. Maverick probe read 197, probed with the Thermapen a few times with a reading of 198-201 and felt like butttaahhhh!

Looking forward to the real work of eating!!! Tried a small bite, which was tasty with a real good bark, yet still moist.

Only mis-hap was a slight burn trying to keep from smashing the Maverick leads. Look forward to using the mini-WSM on a less windy day.

Thanks to all those that have provided build threads or suggestions along the way.

Half pork and half chicken, red pepper, onion, green pepper, avocado, sour cream on a jalapeño wrap.

I am already full from the required taste test during the pull.

No diffuser, just a wire fuel ring. I tried to keep the racks as high as possible.
