I am grilling a pizza on my acorn today. In JM's video he uses a "pizza pan" as a diffuser. Can I just use aluminum foil?

I have not seen the video. I don't see why not. You may need something to hold the foil down. You could wrap it around the grate and leave space on the side for air flow.
