Talking Reverse seared bacon wrapped filets

So last night I fired up the kamado for some baked potatoes and reverse seared bacon wrapped filets for my MILís 87th Birthday dinner. I set it up for direct / in-direct and fired it up for a 300 degree target temp.

I put the potatoes in on the bottom level and the filets on the in-direct top level. (no pics of this) Potatoes were on for 5 minutes before I put my wifeís and MILís filets on for another 15 minutes. (With some Pecan and flipping every 5 minutes) After this I put my filets on the top level (along with the first ones) for another 20 minutes (again with some Pecan and flipping every 5 minutes) until the IT on mine hit 115. I open the vents wide open until I get a 450 reading on my dome. At this point I move the potatoes over and sear the filets for 5 per side. Here they are searing.

Looking good!! I love my bacon wrapped filets,actually anything wrapped in bacon lol... Where those from Omaha Steaks? A customer sends them to me a lot and I noticed your metal bacon picks are just like the Omaha ones and Ive never seen them for sale anywhere locally

Thanks. No it's not cottage cheese. I use Skotidakis Dill & Cucumber Greek Yogurt Dip in lieu of Sour Cream. I also use it on my Tri-Tip Sammie's as well.



If you can find it (I get it at Costo) give it a try. You won't be disappointed.

Nice looking filets. They are on e of my favorite steaks. You can actually get a good deal on them at Target. Don't laugh.

oh man you had me at baccon wrapped.... ie bacon wrapped shoes... sticks what ever else....oh as long as we are talking baccon here..

try this and dont say ewwww till you have ate some

fry really crisp some thick cut baccon
let drain to remove grease
melt hershy chocolate and cover bacon
put on wax paper and put in freezer/ fridge to set up depending how soon you want to eat it.. eat it cold not frozen you just want the chocolate to be hard again... omg this is good cut into bite size peices.. its the sweet and salty deal.. way good bacon has to be crispt though
