Default Pollo al Mattone

Chicken under a brick, roasted corn, and beefsteak tomato slices with fresh basil from the herb garden (it's ready to pick already here in Texas)

Looks great! I heat up the bricks pretty hot before putting on the chicken because I kinda like the crispy burnt skin.
