Quick trim on a select. I'd buy a case if the were all like that.

That has better marbeling than the Snake River Farm Wagau brisket I cooked last Friday!

Don't worry, with the popularity of brisket and the new meat naming system, I am pretty sure there will be at least 4 whatever they are now calling thems on each cow.

That is a great looking Brisket for a Select grade. Must have gotten graded on the 5 min Furlough the Cow inspectors received.
