i have smoked ham,turkey,butts, ribs you name it . BUT i have never tryed pastrami. And need help. anybody want to help ????what spices , what brine . and what temp/ Also wrap or not .

I just used thirdeye's process yesterday- 3rd time that I have done it and it always comes out Great

Can't beat Thirdeye's process. I've done it several times with great success. Use a brisket, not a round, just better results IMHO.
