Nice build!
My coal basket, like your's, is tall and protrudes about an inch or so into the tamale pot. I did a whole chicken last night on mine (not beer can) and was able to maintain 325F throughout the cook. The bottom vent of my SJ Silver was 1/2 way open. I also used a 10" pizza pan as diffuser and drip pan. I also started out with more lit coals, probably more than your coffee can can hold.
Check your thermo. I use a long stemmed thermo inserted at the lid vent.
Also your initial temps will read low for a while with a mass of cold meat in the cooker so take that into account.

Nice Build !
I have 2 minis and They can run from zero to 450*.
The way I did mine was cut the bottom out, I put a rack where the tamale diffuser went and depending on temps I want I either use a 12"terra cotta pot base wrapped in foil as drip pan /diffuser and if I want High heat I use a piece of stainless steel 12" diameter.
Normally I use minion method with about 15-20 lit briquettes dumped on the pile .Seems to get the temps where i want ...then I usually have the bottom vent closed about 1/2 way gives a 6hr burn.

Last cook I did on mine was with a foiled water bowl and vents wide open. It ran between 260 and 300. I lit using Minion method. Had I lit all of the charcoal it probably would have gone higher, but that was not what I wanted.

Mine usually hangs right at 250. I have a SJG with the side vents only. No charcoal basket and my pot only has hoes drilled in It to match the strainer holes.

I run mine from anywhere as low as 235 to as high as 400 degrees depending on what i'm cooking. During an optimum day mine can hold 235 +/- 5 for 9-11 hours.

with my sjg mine runs around 300. but it really depends on the outside temp and the wind. the wind is the worse as it just sucks the heat out of the mini.
