Default Bacon Question

Just finished soaking my bacon--10.5 lbs using Cowgirls recipe. Saltiness is just right for me. The problem is duty calls and I am going to be away for 3 days. My question is do I let the bacon dry in the refrigerator for three days and smoke it Saturday morning OR should I wrap it and dry it in the refrigerator after I return home Friday and then smoke it?
Help please...

Hmmm....If it were me, I'd wrap it until you get back. Unwrap and dry overnight or dry the slab with a cloth. (I'm assuming this is slab bacon and not back bacon)
I've smoked plenty of bacon that only air dried for a few hours. Wiped the moisture off to prevent streaking and cold smoked with no problem at all.

Good luck with what ever you decide to do!

You are right it is belly bacon. I just finished wrapping it. Will unwrap and dry properly when I get home.
