Default Venison Backstrap-n-Wild Onion Sauce

The wild onions are showing up around the farm. I like to use them while they are available.

the venison is from deer season.. http://www.bbq-brethren.com/forum/sh...d.php?t=149609







I cooked the onions with garlic in butter until tender, added sherry, capers, lemon juice, salt and pepper to taste and a small bit of cornstarch to thicken.



seasoned the venison steaks with oil then Tatonka Dust...
grilled to medium rare.









I liked it.... a lot! :)

I've been getting a lot of good use out of the deer meat. Made a lot of chili and stew over the winter.
Really love the backstrap steaks though.
