Default Smoke:30.. and the butt is on!

Farkin long story short..finally got my uds smoking after 3 year build..and it still has cosmetics that I want finished. But have been wanting to grasp air/temp control before its half past summer. This is actually my second smoke( first was a whole chix and was successful, cooked a lot faster than I imagined..2hrs)
Anyways second session is underway as of 930 this morning. Its a 8lb butt. Temps seem to be stayin steady at 200..which from what I understand would be about 230-240 @ center of grate. Poor planning on my part I was hoping to have this for diner tonight (usually eat late) We will see how it goes, its started snowing!

You're off and running, it's the hardest part...
Get her stabilized and you should be fine.
I like the cart with the side tables, those will be really handy.
We cook in the snow here all the time!
BTW, my neck hurts a little.

These are from this first cook. ST. PATS DAY. Bird wasnt so pretty with her legs spred I tend to like my women alittlw more conservative.(not sure why pics are sideways)

Hah..no here in kansas the gravitational pull is..North! Its all good. ( in which..I guess you would know this seein how are just south of here! )

Thanks ThermalMass, the invisable tables serve a lot of porpose ..theyll work even better when I finish the wood slats thay are supposed to be there.

I believe it was cheddar a broccoli..something just pulled from the pantry to cook up fast since the chicken cooked over an hour and half sooner than expected. What fancies you for a drink up in the north?

Beer (all kinds) in the summer and whiskey Coke (usually Jack) in the winter.
BUT, don't usually fill a glass that BIG full of straight whiskey...

Im the same beer every kind in summer and whiskey in winter..oh believe me..3 cubes of ice and like the bottom third of glass is water topped with whiskey..it gets the job done thats for sure.

Thanks guys..and really thanks to everyone of the brethren. Ive learned a lot..and know this is "my thing" now. I hope to pay my dues soon. But thats the best thing about my uds..its cheap..and cheap I can live with. Of coarse more money spent is worth it..but not always necessary. Having 3 little farkers ages 3 and under keep my pockets empty..and its only down hill from here, hah..I can only still just imagine what its going to be like feeding this army once theyre preteens.

BBQ is a great way to feed that army on a somewhat budget! Cheaper cuts of meat with a whole lotta flavor.
