Decided I finally need to break in the new pizza stone I got for Christmas. I set up the Egg with the platesetter legs down, then put the ceramic feet that came with the Egg, and the stone on them. I cranked it up to about 625 done temp and put on the first. It was pepper jack cheese, steak, and peppers and mushrooms.

The next was pepperoni, mozzarella, and peppers and onions. I was good as well but the bottom did get a little burnt. ![]() You just gotta find the temp sweet spot for the crust, they are definitely different. I'd say if you use that crust again, try cooking it longer at a temp closer to 450-500. not only will the crust turn out better, your toppings will also get a bit more color.

Not sure if you have a Publix grocery store where you are. If you do I would suggest using their dough they make in their deli. You can get regular, wheat, and a multigrain dough. Simple and they work well.
Easiest way I have found to control the color on the crust is with parchment paper. I leave it under the pizza for about a minute and then pull it. Works like a charm. We do a fair amount of calzones, and have found that the parchment paper is perfect for that as well. |
