does anybody know if there is a special type of carving knife that helps carve watermelon,pineapple,etc. into fruit baskets

Lot's of YouTube vids out there that will show tools and techniques used. I have cut a swan and it wasn't too difficult.

Yeppers! For just basic baskets, a good paring knife is about it, but you can get into other tools, such as different styles of zesters and cutters to make differing designs. Pretty easy for the most part, made hundreds of 'em in my restaurant days.
