I went to a local BBQ shack and had a little of everything they smoked. I was disappointed in everything but the carnitas. It got me thinking that I wanted to try to smoke some at home. Anyone know what cut of pork is ideal to make carnitas?

It's butt/shoulder etc. Search "carnitas" at the bottom of this page for ideas and recipes. Pretty easy to do well. Generally fried/simmered in lard/leaf fat but you can smoke it a little first if you like.

You mean the mexican ones? I use pork butt and spare ribs and some times throw in some picnic shoulder. Ive been to restaurants who also throw in ears feet etc. If you need help cooking it I have a decent recipe my family seems to enjoy.
