HDD I like on anything that I need to add well balanced heat to. The Santa Maria for beef, like tri-tip, sirloin steaks etc.

Simply Marvelous has some good stuff too, Sweet and Spicy.

This rub looks pretty good. How hot is the HDD? I like to build a spicy base with the rub on chicken but afraid this will over do it. Thoughts? Thanks!
