I got the sample pack kit for christmas. I have done a subprimal cut of NY strip and aged it for 30 days. They are easy to use and turn out a great product. The only tricky part was keeping the vac-mouse in place while I tried to seal it. But once you get it sealed up, put it on the bottom shelf of your fridge with a rack in a tray. It is great and doesn't seep any odors into the fridge, so if you have room in your main fridge or a secondary fridge you can keep it in there instead of having a dedicated refridgerator for dry aging.
