Typical KCBS is Chicken at Noon Ribs at 12:30 Pork at 1 and Brisket at 1:30. Your allowed 5 minutes before and 5 minutes after the turn in time.

Ok tnx was just curious, in Texas we usually do brisket real late 3-4 pm so was just curious how others do it.
