Passed the jiggle test before it was sliced :-)



Got a tour of the pits after. Aaron was not here today :'( They gave me a couple of splits of post oak to take back to California. I'll cut them up into chuncks with my chop saw.

I was the first one up and watched him unwrap what looked like a smaller maybe 10-12 lbs. Asked Him to show me the giggle. And I can attest, it does jiggle :-) Asked for slices from the point, nice bark and it was very tender. Was it the best I ever had, maybe top 5 as I have been to Lockhart on a previous trip.

Ouch, The Pig in Chapel Hill? I've eaten there twice and had really good BBQ. They have some nice items on their menu. That looks like you ordered brisket though. That is generally to be avoided in NC.

That's a shame, but I can believe it from that picture. That brisket looks awful. I wouldn't have guessed it was the same place as I know they had some good chefs there previously. They'd broken off from The Lantern to do BBQ. It was a bit different. I haven't been in a year.
