I wish we had a butcher shop that was half a$$ decent around my neck of the woods. We have ONE and they're NOT good at all.

The cut is called "rib karbonade"...don't know what the exact translation is but it's a bone in pork chop from the Phat side.
As far as the spices check out post #4.
