Default Chicken, beef, pork or all three.

In competitions do you have to provide all three or can you just enter for pork and beef?

You can enter as many meats as you like. Grand Champion is based on total points for all 4 meats so you might as well turn in all 4.

If you're going to do pork and brisket those are the longest cooks. Ribs and chicken are short, so why not just do them, too? You've paid for the gas to get there, set up, etc.

As Paul said, your entry fee for a KCBS event will cover all 4 categories (chicken, ribs, pork, brisket). You can certainly choose to only turn in one or two of the categories but you might as well try all 4 since you are there and it is paid for.
