I had my first tongue tacos at a local restaurant that had them as the special. Pretty tasty. My wife wouldn't touch them.


Your's is looking pretty tasty. I wish I were there.

It takes a lot to get me to chime in on a smoke but this is incredible. After amazing success with a bambi fatty and smoked italian beef this year I am committed to trying new proteins. How odd that it looked just like a beautiful brisket? You pulled when it was tender, no temp readings (just curious)? Well done Bandit.

Had to guess with a few clues...

Since its (a) beef and (b) a hard working muscle - didn't start getting tender until it was over 180*.
Pulled off when over 190* - nearly 4 hours on the smoker (WSM @ 250*).

We have it Corned/pickled,,just like corn beef then pressed and its very sweet and Soft.
Never had it anyother way
Sure looks good.

My mom would get me to eat liver by telling me it was steak. It worked. I loved it.

But again can't get the family to touch it.
I will order it at local restaurants every now an then. Cooked right it has a great flavor to it.
