Default Pizza Stone in place of water pan?

Hi gang,

I'm about to get a new Kamado, but for now I'm still stuck with my master forge vertical smoker. I was wondering about the benefits of the water pan. Is is possible to replace the water pan with a pizza stone to get the desired indirect heat results? Im skeptical that the water adds any additional moisture to the meat itself. Im guessing that its there for indirect heat but I dont know, so I thought I would go to the experts. Thoughts?

From what I know, the water's purpose is to primarily help control temperature. and this is not so much an issue with Kamado because of the insulation.

I would like clarification on this as well as I am purchasing an Akorn myself tomorrow
