Default Salmon for a friend

So, a buddy of mine is an Alaska resident, and they had a banner year for reds this year. They went dipnetting and they caught over a 100 or so fish. The problem then is what to do with all of those fish. You can only eat baked salmon for so long. Needless to say they asked me if I could help and I was happy to oblige. My method is adapted from the naked whiz site.

One of the Reds he brought me. This is how they all were when I got them. They caught so many they were just gutting and heading them to get them into the cooler.

After a day long bath in the brine. I pulled the pinbones, and trimmed them some more. If you cook salmon do yourself a favor and pull the pinbones before you cook it.

I cooked it at about 200, cuz thats what the egg wanted to cook at today. I let it cook for about an hour. Then I pulled it. This is a terrible picture, but the only one I got, because I was trying to get the fish wrapped up to cool down.

Beautiful catch. I miss those days dipping at Chitina. How do you freeze them after the smoke?
