I just finished my first UDS smoker yesterday and I was wondering how long of a burn with charcoal and hickory I should do before throwing any food in it???

Throw some chicken parts or a fatty in it and cook them up, that will season it nicely.

If you want to season before cooking foods, spray the inside with pam or wipe down with lard and bring it up to 300 degrees for 2 hours.

If you have any old bacon or freezer burnt meat, throw that in there to get some grease and juices dripping into the coals during the seasoning process.
Anything that drips grease will work.
