Sunday was a great day to smoke. I found a new place to buy meat and was able to get a 12 lb whole brisket - Prime.
IMG_0162.jpg IMG_0163.jpg After trimming the fat a little I applied the rub and put it in the refrigerator overnight. In the morning I injected it with a mixture of beef broth, worcestershire sauce, garlic powder and cayenne pepper. IMG_0165.jpg I used a mix of Royal Oak lump and cherry logs. IMG_0172.jpg Here it is after a few hours. IMG_0171.jpg And after 7 hours - just before wrapping it in foil for the rest. IMG_0176.jpg Ready for carving. IMG_0178.jpg And did it taste good! BTW, the fat side was on the bottom. [ATTACH]74314[/ATTACH Thanks for looking! |

Man that brisket has a mean smoke ring, the bark looks amazing! Looks like you also had some ribs on the smoker as well. Yum!
