Thinking about doing some smoked catfish for the game tonight. What temp should I target? Low and slow around 225 or hotter? I have hot smoked salmon before would it be about the same? With salmon I used foil to keep it together, same with catfish or is it ok to go right on the grate.

I'd keep it on foil just to be safe. Should take about one hour @ 225 depending on the thickness.

Ok thanks. They are medium sized filets so I was thinking a little under an hour. 150 on catfish right?

140 is safe but I usually just wait for it to flake with a fork test. The last ones I did were finished in 45 minutes and Pecan wood made them GREAT.
