Default First cook on KJ - Chimichurri Pork Tenderloin

Should have my heat deflector next week so had to go with a direct cook for my Kamado Joe first cook .

Had some pic's of the chimichurri making but accidentally deleted them from my camera.

Anyhoo...

Pegged just over 400 using BGE lump



Vent positions




Tenderloin on



Done & off for a rest



Argentinean grilled eggplant brushed w/ evoo & garlic mix



Then dusted with dried oregano, basil, smoked paprika, aleppo pepper, s&p & fresh thyme after a flip on the grill



Plated goodness



Washed down with a bottle of



Super happy with the first cook on my new ceramic.
