Default BBQ with Franklin: The Payoff

Saw this video online and did a search on BBQ Brethren and while it said someone posted it, I couldn't find it. So, just in case any of you missed it here it is:

I know that there are still many people out there that think waiting in line for hours on end at a BBQ joint is noting more than marketing over meat. However, I can attest that this man knows what he's doing and the proof is in the brisket! Sure, I'm an amateur BBQ chef myself but I can still spot a good cook when I see one. First, just look at his love for the craft! Then after that, notice how confident and relaxed he is about getting the right "feel" for the meat regardless of time in the smoker. I've always heard the secret to great BBQ is knowing just how long to forget about the meat while it does it's thing.

In my opinion, Franklin BBQ is some of the best ever. Plus every time I've been on the opposite side of his carving board, I've been overwhelmed with how humble he is. I've even tried to tell the guy how incredible his work is and he always finds a way to shrug it off and thank me instead for something random, like the T-Shirt I'm wearing or tell me that its people like me that keeps him going. Regardless of how you rate his BBQ, you've got to admit, he's a class act that knows what he's doing!
